We were inspired by the lambics brewed over a century ago to create a gueuze in honor of the 125th anniversary of Brasserie Cantillon. Back then, it was common for brewers to use more unmalted wheat in their brews than the 35% we use today. This Gueuze 125 is a blend of lambic brewed on 12-27-2017 with 50% unmalted wheat and 50% malted barley, and bottled on 12-10-2021. Best consumed within 20 years of the bottling date.
125 years ago, bottles did not have labels like they do now; lambic brewers instead marked their gueuze bottles with a thick white chalk line. These markings also served to indicate how the bottles had been placed during secondary fermentation and aging at the brewery, and in what position they had to be placed back once they arrived in the cellar of a bar or café.
Instead of designing a traditional label for our Gueuze 125, we chose to honor our past by hand-painting each bottle with a white stripe.
