For this 'classic' version of the Zenne y Frontera, we have blended no fewer than five different barrels of sherry-aged lambic. The barrels are a mix of very old Oloroso and Amontillado barrels from two small family bodegas. Bodega Joséfa Perez is located in the heart of Jerez de la Frontera and Gutiérrez Colosia in El Puerto de Santa Maria. We let the more than three-year-old lambic mature for an additional year in these sherry barrels. As a result, the weighted average age of this blend is more than 50 months.
